Add some chopped upvegetables (raw or cooked) for more nutrition. Spread on crackers,bread, or rolls.-  BBQ Sandwich: BBQ Beef, Chicken, or Turkey on crackers, bread,or rolls-  Potato Salad Snack or Sandwich: Use left over mashed potatoesand add some ketchup and mustard to eat. Spread on crackers, bread, orrolls. If you made potato salad, use that instead.-  Vegetable Snack or Sandwich: Mix some chopped up or mashedvegetables (potatoes, carrots, zucchini, broccoli, etc.) with saladdressing or mayonnaise. All rights reserved.1 1/2 cups quick rolled oats1/3 to 1/2 cup raisins1/4 cup packed brown sugar1/2 teaspoon ground cinnamon1/8 to 1/4 teaspoon ground nutmeg (if desired)3 cups milk or rice milk or 1 1/2 cups water and 1 1/2cups milk or rice milkMargarine (Especially if your diet is dairy-free.)Stir together oats, raisins, brown sugar, cinnamon,and nutmeg. Note: You can cover tightly and store at room temperatureif you are not using all the mixture. Makes 6-8 children servings or 3 servings.In a medium saucepan bring 3 cups liquid to a boil.Slowly add the oat mix to the liquid. Cook for about 1 minute; stirringconstantly. Remove from heat. Add extra milk or rice milk if needed.Serve.Cinnamon ToastButter one side of a piece of bread. Mix together 2tablespoons of sugar and 1/2 teaspoon of cinnamon. Sprinkle some on thebuttered bread. Toast in a toaster oven on low. If you do not have atoaster oven, place toast in an oven until bread is toasted some. Repeat.Note: You can cut these in half, into strips or usea cookiecutter to make the toast more interesting for your small children.French ToastNew 5/31/02 (I just found this recipe Iwrote last year)Copyright 2001-2002 Barbara Pratt.   All rights reserved.2 beaten eggs1/2 teaspoon ground cinnamon1 teaspoon vanilla3 tablespoons rice/other milk5-6 pieces of breadAdd the egg, cinnamon, vanilla, and milk.  Beat together. Dip into bread.  Fry on skillet or in a pan until cooked on bothsides. Serve with maplesyrup or powdered sugar.Lunch and DinnerMain Dishesor Dairy-freeMain DishesKids PizzaOn a one side of a piece of bread, spread ketchup,spaghetti sauce or tomato sauce on it. Sprinkle shredded cheese orplace a slice of cheese on top of the bread. You can also put someground beef or other meats under the cheese. Toast it in a toaster ovenuntil the cheese is melted.If your diet is dairy-free, omit the cheese and toast until it iswarm (or use acceptable cheese).Toasted Cheese SandwichPlace a piece of sliced cheese on a piece of bread.Toast in a toaster oven on low.
